Lion's Mane (Hericium erinaceus) is one of the easiest gourmet mushrooms to grow indoors — no grow tent, no lab, just a ready-to-fruit kit and a spray bottle. This guide takes you from the box on your counter to a plate of shaggy, white, seafood-flavored mushrooms in about two weeks.
What you'll need
- A Lion's Mane Grow Kit — everything is already colonized and ready to fruit
- A clean spray bottle with fresh water
- A spot indoors with indirect light and cooler temperatures (55–70°F)
Step 1: Place your kit
Set the kit somewhere cool with indirect light, away from heat vents, direct sun, and drafty windows or fans. A kitchen counter or shelf usually works well.
Step 2: Cut an X and mist
Cut a small X in the front of the bag to give the mushroom a place to fruit. Mist that opening 2–3 times a day to keep the surface humid — Lion's Mane loves moisture and will stall if the air is too dry.
Step 3: Watch for pinning
Within a few days you'll see small white “pins” form. From here growth is fast, and the mushroom develops into a rounded, icicle-covered ball. Keep misting and don't let the surface dry out.
Step 4: Harvest at peak
Harvest when the mushroom is full and bright white, before the spines get long and start to yellow. A firm, white Lion's Mane is at its peak; once it yellows or browns, it's past its best. Twist and pull gently, or cut at the base.
Step 5: Get a second (and third) flush
After harvesting, let the kit rest, keep misting, and most kits will produce a second and even third flush over the following weeks — several harvests from a single kit.
How to cook Lion's Mane
Tear it into chunks and pan-sear in butter until golden. The texture and flavor are famously close to crab or lobster, so it shines in “crab” cakes, tacos, or simply on toast.
